E4T Fruit and Vegetable Bar. Chana Dal (sigh) Another reminder

A gentle nudge, a brisk whisper — the E4T Fruit and Vegetable bar is that midday reminder to work more fruits and vegetables into our diets.

A couple of weeks ago, I wrote about Chana Dal, a magical food with virtually no Glycemic Index (it’s somewhere between 9 & 11 on the scale). And then I put it out of my mind.: So today is a reminder (for those who are worried about the rate carbohydrates are metabolized) that there is a food that is filling without rocking your blood sugar.

And I will add my obligatory reminder that if like me, you prefer dal made with ordinary lentils as opposed to chickpeas, the difference in whatever the glycemic threat index is will be negligible.

And, for those who simply cannot give up fried foods, remember you can substitute chana (chickpea) flour for wheat and cornmeal, and oven fry. And yes, you can make a batter. Use water or blue milk instead of egg.

And chickpeas are also the main ingredient in that old desert favorite, falafel. While I highly recommend falafel as a food, I suggest that you do not join O’Reilly in his recent declaration of other uses for it.
