In the crock today: garbanzo bean soup. ["Garbanzo" is a happy word for me, I love to say "garbanzo."] Adapted for cube-cooking from a recipe on cooks.com…
1 onion, diced into crock
add olive oil to coat and crock on High until tender
1/3-1/2 c (dry) garbanzos, soaked overnight & drained
1/3 c dried tomatoes
1 garlic clove, diced
1 salt packet (1/8 tsp?)
pepper to taste
1 jalapeno, split
4 small (golf ball-size) potatoes, whole
The original recipe leaves mashing the beans & potatoes as an option, to make it thicker. I’ll have to see how that goes. If I had any Mrs. Dash, I would have added 1/2 tsp.
If I’m lucky, I’ll be able to scavenge a couple of those little cream cheese tubs & make some sardine dip to go with it.
Also J4T, I’ll drink my water, take my fiber, and take a walk (stiff headwind out there today!).
The soup looks wonderful, far, but *sardine dip*??? How do you make THAT? It sounds (maybe) yummy on crackers.

Hi all. Much needed rain here in the valley so I won’t be walking. I’ll make sure to drink my water though. That looks like some good soup, Far.
The soup turns out to be good… it pulled a bit more of the jalapeno flavor out than I’d expected. Or maybe it’s the black pepper; jalapeno doesn’t usually burn my lips.
Hi Kansas, here’s my sardine dip: hunt & gather two small tubs of cream cheese. Drain a tin of sardines & remove the backbones etc. Run to Kroger & replace the Mrs. Dash you let run out over a month ago (sheesh on me). Mash the cream cheese & sardines up with a fork, add about 1/2 tsp of Mrs. Dash, mix well, serve on your favorite crackers. Not as good as smoked salmon, but nothing is as good as smoked salmon.
